Did you know that having a strong immune system helps your body protect itself from problematic infections, bacteria and viruses like the coronavirus? While you may have heard this before, especially as of late, you might be wondering, “What can I do to boost my immune system?”

Aside from getting an adequate amount of sleep, staying properly hydrated and nourishing yourself with the proper vitamins and supplements, eating whole plant-based foods, healthy fats and limiting added sugar to your diet can help to boost immunity.

Finding immune boosting foods isn’t hard – in fact, you probably have some like citrus fruits, broccoli and spinach in your refrigerator already. If you’re looking for an immune boosting recipe I have a perfect summer salad you’ll be able to whip up in no time! As always, I encourage you to use organic ingredients if possible.

Immune Boosting Summer Salad Recipe

  • 1 avocado, sliced
  • 1/2 cup mushrooms, chopped
  • 1 tomato, diced
  • 1/2 cup green onion, chopped
  • 1 cup arugula
  • 1 cup mixed greens
  • 2 cup spinach
  • 1/4 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/2 cup Mandarin oranges

Immune Boosting Summer Salad Dressing Recipe

  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon garlic powder (or two crushed cloves of garlic)
  • 1/2 teaspoon onion powder
  • The zest and juice of one lemon
  • Salt and pepper to taste

Directions

Using a large bowl, combine all fruits, veggies, nuts and seeds and toss, making sure all ingredients are evenly dispersed. In a separate bowl, whisk together extra virgin olive oil, balsamic vinegar, garlic powder (or garlic), onion powder, lemon juice, lemon zest, salt and pepper. Once the dressing is well combined, slowly drizzle over top of the salad, making sure the dressing evenly coats all of the ingredients. Serve aside freshly grilled chicken, fish or vegetables and enjoy!
