The weather is getting warmer, and while I likely won’t be entertaining anytime soon, (you know, pandemic stuff), that won’t stop me from making light, fresh and healthy meals for my husband and myself.
One of my favorite warm weather appetizers is bruschetta. What’s better than enjoying a glass of red wine on the patio on a spring night? Doing so with some delicious and flavorful light bites, of course!
My bruschetta is simple to whip up. Let me tell you how I do it!
Ingredients
- 10 cloves garlic, minced
- 2/3 cup tomatoes, diced
- 2 oz basil, chopped
- 1/3 cup olive oil
- pinch of salt
- 2 loaves French bread, toasted and sliced a half inch thick
Step-by-Step Instructions
Directions
Combine all of the ingredients, aside from the bread. Once everything is thoroughly combined, add a tablespoon of the mixture to each slick of toasted bread.
Enjoy
Grab your favorite serving platter, arrange the toasts and serve immediately.
