Heart Healthy Avocado Salad

- 2 large organic avocados
- 1/2 cup chopped red onion
- 2/3 cup diced organic tomatoes
- 1 cup organic black beans, drained
- 2 T organic toasted sesame oil
- 2 T organic balsamic vinegar
- 1 t organic herbed sea salt/veggie seasoning
- 2 each organic crushed minced garlic (or 1 teaspoon garlic powder)
- dash of organic lime or lemon juice
In a small bowl, whisk together the toasted sesame oil, balsamic vinegar, lime or lemon juice, herbed sea salt or veggie seasoning and garlic (minced or powder). In a separate bowl gently combine the avocado, red onion, tomato and beans. Drizzle the liquid mixture over the vegetable mixture and stir well enough to ensure all the veggies are well-coated. Serve as is, atop of bed of leafy greens, tucked into a wholegrain pita or use it as the protein portion of a burrito bowl!
